Nutty Granola Cookies Recipe


1 ½ C flour
1 tsp baking soda
1/2 C brown sugar, packed
1/2 C cold butter
1 ½ C honey raisin granola
1 egg
2 Tbl milk
1 C nuts, lightly toasted

1. Preheat oven to 350°F.
2. Lightly grease cookie sheet. In a large bowl with a wire whip, whisk flour and baking soda.
3. Add in brown sugar and combine. With a pastry cutter or knife, in scissors-fashion, cut butter into flour/sugar mixture. Stir in cereal. Mixture will be chunky. In a small bowl, combine egg with milk.
4. Add to cereal mixture. Stir. Add nuts and stir to combine. Drop by tablespoons onto prepared cookie sheet. Bake for 11-14 minutes. Cool on pan for 2 minutes and finish cooling on wire rack. Makes about 3 dozen.


Honey raisin granola is not only high in fibre (from oats and seeds), but is also a good source of iron (oats). What makes it a great alternative to some other cereals is that it uses whole grains (maintains bran, germ, endosperm), so no nutritional benefits are lost during processing. As well, raisins contain catechins (a type of antioxidant) which may increase colon health.
