Whole Yellow Peas Curry Recipe



Ingredients:

1 C dried whole yellow peas
7 C water
2 Tbl ghee or oil
1 tsp cumin seed
1 pinch of hing or asafetida
1 small onion, chopped
1 clove garlic, minced
1 inch ginger, grated
1 green chili or jalapeño, minced
1/3 tsp turmeric powder
1 tsp garam masala
Juice of 1/2 lemon
Cilantro, chopped
Salt
Yogurt

Instructions:
1. Wash whole yellow peas in water and cover them with 2 inches of water above the peas. Soak overnight.
2. Drain the peas and put them into a pot with 7 cups of water.
3. Turn the heat to medium high heat. Skim the foam that forms at the surface off with a spoon.Once it stops foaming add in salt and turmeric powder.  When the peas are boiling, start to simmer them at lower heat until they are soft, about 60-90minutes. If they are not completely soft at this point, boil them until they are.
4. In a separate pan, heat the oil under medium heat. Add in the cumin seed and asafetida. When the cumin seeds starts to brown and get fragrant, throw in your chopped onions.  Let the onions cook until they are translucent. Add in your garlic, ginger and green chili. Stir well.
5. Cook for a few seconds and then add in the garam masala. Stir the pot well to enhance the fragrance.
6. Add the dal to the pot of fried onions and spices.  Mix well and add more water to attain your desired consistency. Salt to taste.  Cook together for 5 minutes at low-medium heat.
7. Turn stove off.  Add lemon juice and chopped cilantro and stir.
Serve in bowls with a dollop of yogurt and rice or roti on the side.

Factoid

Peas are a legume and they grow best in cool weather. They are a good source of fibre, carbohydrates, and provide some protein. Pea plants were famously used in Gregor Mendel’s (often considered the father of modern genetics) experiments to explain the rules of heredity.
