White Frosting Recipe

3/4 C white unbleached flour
3/4 C milk
3/4 C white sugar
3/4 C butter
1 tsp vanilla extract

1. Cook flour and milk together in a saucepan on medium-low heat until it is a thick like paste; then cool in refrigerator.
2. Mix sugar, butter and vanilla together.
3. Add paste then beat in electric mixer until smooth.

One reason flour is often bleached is to speed up the aging process (becomes better for baking when aged). When freshly milled, flour is actually yellow because it contains xanthophylls. However, when aged naturally, the oxidization process eventually turns the flour white.
