Amaranth Cornbread with Maple Recipe

Cooking spray (vegetable)
1 tsp vegetable oil
2 C yellow cornmeal
1 ½  C all-purpose flour
1 C amaranth(uncooked)
1 Tbl baking powder
12 tsp baking soda
12 tsp salt
1 C low-fat buttermilk
23 C maple syrup
2 Tbl vegetable oil
2 eggs
2 Tbl chopped pecans

1. Preheat oven to 400°F.
2. Coat a 9-inch cast-ironskillet with cooking spray and 1 teaspoon of oil. Bake at 400° F for 7 minutes.
3. Combine cornmeal, all-purpose flour, amaranth, baking powder, baking soda and salt in a large bowl. Combine buttermilk, syrup, 2 tablespoons oil, and eggs in a small bowl; stir well with a wire whisk. Add to cornmeal mixture, stirring until dry ingredients are moistened.
4. Pour batter into the preheated skillet; sprinkle the pecans over batter. Bake at 400° for 25 minutes or until a toothpick comes out clean.


Amaranth is an ancient grain that is gluten free. It is especially high in protein, fibre, and the amino acid lysine.
