Zucchini, Pistachio, Freekeh Salad  Recipe

1 C uncooked freekeh
2 ½ C vegetable broth
1 small zucchini, quartered lengthwise and sliced
1/4 C roasted pistachios, chopped
2 Tbl parsley, chopped 
1 tsp extra-virgin olive oil
1 Tbl fresh lemon juice
Salt and pepper to taste
Lemon wedges to serve (optional)

1. Bring the freekeh and vegetable broth to a boil in a medium saucepan. 
2. Reduce heat to low. Cover and let simmer for 20-25 minutes. 
3. Drain off any excess liquid if necessary.
4. Put the freekeh into a large bowl and toss it with the zucchini, pistachios, and parsley. Stir in the olive oil and lemon juice and season with salt and pepper to taste. Can serve with lemon wedges. 


Freekeh, also known as Farik, is an ancient grain originating in the Middle East. Because the wheat is roasted when it was young, it remains green and is thought to retain more of its original nutrients. Cracked freekeh also cooks faster in comparison to other whole grains.
